Blueberries are super easy to freeze so stock up. You can keep some on hand to eat now, then freeze the rest.
I enjoy adding blueberries to smoothies and my super simple homemade blueberry sauce is berry delicious over waffles, pancakes, cheesecake, or to perk up plain yogurt. Come to think of it, Father's Day would be a good time to have some on hand. Oh, and one more thing...
Whole Foods is having a blueberry recipe contest. They will be giving five $250 Whole Foods Market gift cards to the freshest of the fresh organic berry recipes. Hurry though, because the recipe has to be submitted by June 15.
Super Simple Blueberry Sauce Recipe
- 1/3 cup of water
- 1/2 cup of sugar
- 1 Tablespoon cornstarch
- 2 Full cups of fresh blueberries
Note: This sauce is pretty thick. Add a bit more water for a thinner sauce.
Pour the water into a large saucepan over medium heat. Slowly stir in the sugar and cornstarch. Add the blueberries and keep stirring until it begins to boil. Let it continue to boil for one minute and you are done.
The sauce can be used hot or cold and depending on how much that you have it can be reheated in about 30 seconds in a microwave.
